If you’ve booked a cottage holiday – sometimes there’s nothing better than picking up some delicious local food from the shops.
Heading back to the cottage to cook up a simple, home cooked meal to enjoy out in the cottage garden with a glass or two of wine.
If you’re staying in Norfolk during June and July it’s the best time to take advantage of the short samphire season.
Pick up some delicious marsh-samphire from fish mongers, deli’s or little local shops.
Marsh-samphire is a delicious, salty little vibrant green plant which goes so perfectly with pasta, gnocchi, fish or potatoes.
Our tasty gnocchi and garlic butter recipe is perfect for cooking whilst away on holiday. It’s super quick to make and only needs five ingredients.

How to cook samphire

The young, fresh plants only need a few minutes cooking – either boil them or stir fry them. Remember to wash them well under running water before cooking and don’t add salt to the dish. It is naturally salty so you won’t need any extra adding.
Samphire with Gnocchi and Garlic Butter

We just love this recipe – it’s so quick, perfect for holidays when you want something home cooked but want to spend most of the evening sat enjoying where you are – sipping wine and relaxing!
Bring a pan of water to the boil – tip in the gnocchi and samphire and cook for around 3 minutes or until the little gnocchi float to the surface of the water.
Whilst the gnocchi and samphire cook – melt a generous knob of butter to a large frying pan – and add in a chopped clove of garlic – sauté gently.
Drain and then tip into the garlicky butter and toss to coat everything. Season with black pepper and divide into two bowls. Perfect.
When is samphire season?

You can buy Norfolk samphire from mid June – July. You can also normally pick up imported samphire in the supermarket outside of this season.
Can you eat samphire raw?
You can eat it raw – but it is salty – so I’d tend to just stick to adding a little finely chopped to salads as flavouring rather than a main ingredient.
How do you cooksamphire quickly?
Boil it in water with no added salt for around 3-4 minutes. Or sauté in butter for around the same time.

But… If you’re not fancying gnocchi, then try the following serving suggestions….
- Boil then finely chop and sprinkle onto boiled new potatoes with butter.
- Add to bruschetta with mozzarella and fresh red chillies
- Sprinkle into salads.
- Serve with linguine with lemon and garlic butter and lots of chopped flat leaf parsley.
- Serve steamed with seafood – or alongside Cromer crab.

Samphire Recipe with Gnocchi
Quick and easy meal for two

Cook Time 5 minutes
Total Time 7 minutes
Ingredients
- 250g fresh gnocchi
- 50g samphire - well rinsed under cold running water
- 30g butter
- 1 clove garlic - finely chopped
- pinch cracked black pepper
Instructions
- Bring a pan of water to the boil. (do not add salt)
- Tip in the gnocchi and samphire and cook for around 3-4 minutes or until the gnocchi floats to the surface.
- Whilst the gnocchi and samphire cook - add a knob of butter to a large frying pan and gently sauté the chopped garlic.
- When the gnocchi is cooked - drain and tip the gnocchi and samphire into the garlic butter - toss well to coat everything.
- Divide into two bowls and season with black pepper
